Once again, this is why I’m a Mark Bittman fan. His recipes are healthy, simple, satisfying, and anyone can use them. I’m going to take his advice and pin this one to the fridge.
You can find many of his recipes online, but if you like having it all in one place, you can’t go wrong with this encyclopedic book. And remember, you don’t have to be a vegetarian (he isn’t). This book has comprehensive sections on vegetables, beans, legumes, salads, eggs, dairy, grains, sauces, breads, veggie burgers, pasta, and even desserts. It is definitely one of my top go-to cookbooks.
