A New Treat – Raspberry Chocolates

I couldn’t let the holiday go by without adding a new healthy and really yummy treat for you all. I don’t want you grabbing those corn-syrup-laden GMO junk foods, and I certainly don’t want you feeling deprived! These only take a few minutes and a few ingredients, and they are SOOOO good!

Ingredients
1/3 cup almond butter
1/2 cup coconut oil* or pastured butter/*ghee
1/2 cup raw cacao powder*
1 teaspoon vanilla
1/8 teaspoon sea salt
2 Tablespoons xylitol*
1/2 cup raspberries, fresh or frozen

*you can buy these ingredients in my office – all the best quality you can find!

update: I LOVE using some *cacoa butter in here as well – just a little really intensifies the heavenly chocolate flavor. Sub about a tablespoon for the other fat you are using

Mix together almond butter, fat, salt, sweetener, and cacao over very low heat, or a double boiler. Stir to melt and blend. Fill each opening of an ice tray just half way. Add a raspberry or two to each. Cover with the remaining mixture. Put in the freezer to set – it doesn’t take long. Pop them out and enjoy!

These are very rich, so I’m guessing you won’t eat the whole batch, but even if you do, you are eating healthy, nutritious FOOD!
