I’ve been playing with chocolate chip cookie recipes for a while, and I finally achieved my goal: Chocolate Chip Cookies that are high protein, high fiber, low glycemic, healthy fats, with no grains, no dairy, no added sugar – No Junk! And they’re so good! I get thanks from all over the world for this recipe! Even people who don’t care about “healthy” at all said they were terrific. YES!
Ingredients
1.5 cups almond flour
1/4 cup ground flax (use coconut flour or buckwheat flour if you want them denser/harder, rather than soft and chewy)
1/2 cup xylitol or monkfruit
1/4 teaspoon sea salt
1/2 teaspoon baking soda
1/2 cup coconut oil, warmed
2 eggs
1 Tablespoon vanilla
1/2 cup unsweetened coconut flakes
1/2 cup chocolate chips, 70% cocoa or higher
Combine dry ingredients in food processor. Pulse in remaining wet ingredients until dough forms. Mix in chocolate chips by hand, and use a scoop to drop on parchment paper, on a cookie sheet. Flatten slightly with a spoon. Cook at 350 for about 10 minutes, or until just brown around the edge. Let cool for at least 15 minutes.
NOTE: I recommend you do not use Bob’s Red Mill Almond Flour for this recipe. It will not give you good result. Instead, use a finer ground almond flour, like this one:

why would you use xylitol as a sweetener as opposed to coconut sugar?

Because xylitol doesn’t feed the bugs. In fact it is anti-microbial. Coconut sugar is low glycemic but it will still feed microbes, so not good for a lot of people. Most of the people I check have underlying chronic infections of one sort or another, even if they don’t realize it.

What would you suggest instead of almond flour? Almonds tend to be a major migraine trigger for me. 🙂 not sure if the flour would be the same trigger. (?)

I’m sure you can use another nut flour, although I haven’t tried that with this recipe. But I developed the recipe specifically for almond flour, so if that doesn’t work for you, I don’t think you can use it.
